This is Debby Steele writing, the birthday person causing our recent trip to The Orchid House. We had a wonderful time and I have no complaints... ...As to the staff...you are a very lucky person. Carol is an excellent, thoughtful housekeeper who somehow manages to make the place sparkle, get the linens cleaned and replaced, pick up after everyone...without being even the slightest bit intrusive. She deserves to be cloned. Margaret was sweet, warm and welcoming. We enjoyed our dinners and her company very much but her cooking flexibility was limited. Unfortunately, Peter and I are both excellent and experienced cooks. We do a lot of Caribbean cooking at home (more virgin island style than Jamaican) and often find that others are not familiar with what we would like. Margaret had never cooked conch in butter sauce or any other way but did a decent job after we told her how to do it. Una--nothing I say can express adequately the role she played in our visit. She was a very good cook with a wonderful approach to a big family. We enjoyed everything she made and I often had to stop the boys from killing each other for the last piece or serving of something. Her deserts and shepherd's pie will be long remembered. Una provides so much more than just food though. She really is an ambassador. She made us feel so comfortable and was always ready to answer a question, explain something about Silver Sands and the area or just to chat and laugh. She is a gem. I understand the economics of resort rentals, but this is someone who will bring back families and whose reputation will cause others to choose The Orchid House over others. She is really more of a manager than just a cook and she is a great trouble shooter. No matter what we asked about or for, she didn't just say "no problem" she made it no problem for us. Whatever she is paid cannot possibly be enough to compensate for the goodwill she creates... Debby Steele,
